Ground beef empanadas

Ingredients:

1 lb ground beef

1 Onion chopped

1 tsp salt, 1/2 tsp pepper, 1 tsp garlic powder, 1 tsp cumin, 1 tsp chili powder, 1 tsp brown sugar

1 red bell pepper, chopped

1 cup frozen corn

3 Tbs tomato paste

1/2 cup water

Pie dough for two 9" pies

Egg wash: 1 egg whisked with a splash of water


 Instructions:

Heat oven to 350 degrees.

1 red bell pepper, chopped

1 cup frozen corn

3 Tbs tomato paste

1/2 cup water

Pie dough for two 9" pies

Egg wash: 1 egg whisked with a splash of water


 Instructions:

Heat oven to 350 degrees.

Brown ground beef in a skillet with onion and seasonings. Add bell pepper and corn. Stir in tomato paste and water to make a sauce. 

Roll out pie dough, cut into 4" circles. Put 1/4 cup of meat filling into each circle, then fold over half the circle to make a crescent shape. Seal shut with tines of a fork. Brush each with egg wash. Bake for 20 minutes or until golden brown.
