Beef Stew with bacon

Ingredients:

4 strips bacon

1lb stew meat cut into 1" chunks

2 Tbs olive oil

1 onion, chopped

1 tsp salt, garlic powder, 1/2 tsp pepper

5 carrots, peeled and cut into long pieces

4 potatoes, peeled and quartered

2 Tbs tomato paste

1/4 cup red wine


Instructions:

Cook bacon on foil lined sheet, in oven set to 375 for 20 minutes or until desired donene

Ingredients:

1lb stew meat cut into 1" chunks

1 tsp salt, garlic powder, 1/2 tsp pepper

5 carrots, peeled and cut into long pieces

4 potatoes, peeled and quartered

2 Tbs tomato paste

1/4 cup red wine


Instructions:

Cook bacon on foil lined sheet, in oven set to 375 for 20 minutes or until desired doneness. Drain on paper towel and chop into large pieces.

Using the saute function on an instant pot, cook onion in oil for 5 minutes. Add all remaining ingredients. Pressure cook for 45 minutes, allow for natural pressure release. To serve top with bacon bits.
